Shoyu: Japanese soy sauce
Subtly different from Chinese soy sauce and I think is definitely a better accompaniment to sushi, but certainly not a disaster to use the standard soy sauce if that’s all you can get your hands on.

Rice vinegar
This is a key ingredient when making sushi: it’s mixed with salt and sugar then sprinkled over cooked rice.

Mirin
A sweet sake that is only used in cooking.

Wakame
Dried seaweed that you can rehydrate by pouring boiling water over.

Matcha
Finely powdered green tea.
